Roasted Tomato Sauce

Ingredients

  • 3 lbs of mixed tomatoes
  • 1 head of garlic
  • a handful of fresh basil
  • a handful of fresh oregano
  • 3 tbsp of olive oil
  • 2 tsp of salt
  • 2 tsp of pepper

Instructions

  1. Pre-heat the oven to 350 degrees. Place tomatoes and garlic in a large pan and drizzle with olive oil. Add salt and pepper. Roast for two hours.
  2. Cook pasta. Add tomatoes and garlic to a blender. Add fresh herbs. Blend until completely smooth.
  3. Coat the pasta with sauce or store in the refrigerator or freezer for later use.
  4. Enjoy!
