Ingredients
- 1 ¼ cups of apple cider vinegar
- 2 cups of water
- 3 cucumbers
- 1 bunch of carrots
- 2 tbsp of salt
- 1 tbsp of pepper
- 2 tbsp of pickling spices (I chose a mixture of celery seed, coriander, mustard seed, allspice, dill seed, cloves, chilli pepper, and bay leaves)
Instructions
- Combine vinegar, water, and salt in a small saucepan.
- Let cook for 5-10 minutes, stirring occasionally.
- Slice cucumbers and carrots and place into a container or mason jar. Add pepper and pickling spices in as well.
- Pour the vinegar mixture into the container and let sit in the refrigerator for at least 48 hours.
