Ingredients
- 2 cups of baby greens of your choice (baby arugula, baby kale, baby spinach, etc.)
- 1 cup of fresh basil
- 1/4 cup of fresh mint
- 2 cloves of garlic
- 1 tbsp of salt
- 1 tsp of pepper
- ½ cup of olive oil
- 1 cup of walnuts
- 1 lemon
- 1 lb of pasta
Instructions
- Cook pasta. Save some of the pasta water for later.
- Combine ingredients in a blender or food processor.
- Mix the pesto in with the pasta. Add pasta water as a thinner if the pesto is too thick.
- Enjoy!
