Lemon Basil Walnut Pesto

Ingredients

  • 2 cups of baby greens of your choice (baby arugula, baby kale, baby spinach, etc.)
  • 1 cup of fresh basil
  • 1/4 cup of fresh mint
  • 2 cloves of garlic
  • 1 tbsp of salt
  • 1 tsp of pepper
  • ½ cup of olive oil
  • 1 cup of walnuts
  • 1 lemon
  • 1 lb of pasta

 

Instructions

  1. Cook pasta. Save some of the pasta water for later.
  2. Combine ingredients in a blender or food processor.
  3. Mix the pesto in with the pasta. Add pasta water as a thinner if the pesto is too thick.
  4. Enjoy!
